Frequently Asked Questions about HACCP

What is HACCP?

HACCP stands for Hazard Analysis and Critical Control Points. It's a preventative approach to food safety that identifies potential hazards and implements measures to control them throughout the food production process. This systematic method helps ensure food safety by focusing on prevention rather than relying solely on end-product testing.

What is HACCP certification?

Hazard Analysis and Critical Control Points is a management system with specific guidelines for identifying biological, chemical, and physical hazards in food production, procurement, handling, manufacturing, and distribution.  Awarded by a governing body like the International HACCP Alliance, it signifies that the attendee has completed a HACCP certification course and is well-versed in the principles of HACCP.

Why is HACCP certification important?
  • Ensures Food Safety: It demonstrates your commitment to producing safe food by adhering to internationally recognized standards.
  • Meets Regulatory Requirements: HACCP certification is a legal requirement for food businesses in many countries and sectors.
  • Enhances Brand Reputation: Certification builds trust with consumers and stakeholders, showing that you prioritize food safety.
  • Reduces Risks: By proactively identifying and controlling hazards, you minimize the likelihood of foodborne illnesses, product recalls, and legal issues.
  • Improves Efficiency: HACCP systems can streamline operations and reduce waste by optimizing processes.
Why do I need HACCP training?

The USDA requires companies to have at least one team member who has undergone advanced HACCP training. Also, businesses must have a written HACCP plan and can demonstrate that the plan is followed in their facilities. The FDA also has HACCP certification guidelines for certain food processors. But beyond these regulatory requirements, for decades HACCP has helped countless companies build a culture of safety in the workplace, eliminate workplace hazards, mitigate the risk of recalls, and develop safer, higher-quality products.

What is the difference between Basic and Advanced HACCP certification?

Basic HACCP Certification covers the fundamentals of HACCP, including the seven principles, hazard analysis, and prerequisite programs. Advanced HACCP Certification builds upon the Basic course, exploring advanced topics like validation, verification, auditing, and managing HACCP systems in complex environments.

Who should take a HACCP course?

Anyone involved in the food industry can benefit from HACCP training. This includes:

  • Food handlers
  • Food safety managers
  • Production managers
  • Quality assurance personnel
  • Food safety auditors
  • Restaurant owners and managers
  • Catering staff
  • Food retailers
Which food safety standards require HACCP training?

Launched in 2000, the Global Food Safety Initiative (GFSI) is a business-driven initiative that brings together retail and manufacturing food companies to develop better food safety management systems.

GFSI recognizes several certification programs under its benchmarking requirements. GFSI recognition “offers a passport to the global market,” but HACCP certification is essential to meet the requirements of several of these standards.

One of the most important standards recognized by GFSI is the Safe Quality Food (SQF) management system.

According to the SQF Institute, SQF requires the development and implementation of a comprehensive set of controls, policies, and procedures to reduce risk and ensure food safety. To receive SQF certification, companies must implement an effective food safety management system based on HACCP. SQF also requires ongoing monitoring and verification of the HACCP plan “to ensure it effectively controls hazards and maintains food safety. This includes regular testing and validation of the HACCP plan and corrective actions taken as necessary.”

Under the Food Safety System Certification Scheme (FSC 22000), organizations must develop and implement a hazard control plan.

In addition, the BRC Global Standard for Food Safety (BRCGS) is recognized by GFSI and requires companies to have a fully implemented and effective food safety plan that incorporates HACCP principles. The business must have a food safety team with a team leader who exhibits in-depth knowledge of HACCP principles, and all food safety team members must have specific and relevant HACCP knowledge.

What industries require HACCP certification?

HACCP certification is essential across various sectors, including:

  • Food manufacturing
  • Food service (restaurants, cafes, catering)
  • Food retail
  • Agriculture
  • Seafood processing
  • Dairy production
  • Beverage industry
